Potato Fritters with Cheese and Crispiness
Components:
- Two large grated russet potatoes (about two cups)
- Half a cup of shredded cheddar cheese (or any other type of cheese, such as Monterey Jack or mozzarella)
- 1/4 cup of Parmesan cheese, shredded finely
- A quarter cup of all-purpose flour
- One huge egg
- Two tablespoons of freshly chopped parsley (for garnish, if desired)
- One teaspoon of powdered garlic
- One teaspoon of powdered onion
- To taste, add salt and pepper.

Get the potatoes ready:
Grate the potatoes with a food processor or a box grater after peeling them. After grating, wrap the potatoes in cheesecloth or a fresh kitchen towel and wring out any remaining liquid. To get crispy fritters, this step is crucial.
To make the Fritter Batter, put the grated potatoes, Parmesan and cheddar cheeses, flour, egg, onion and garlic powders, salt, and pepper in a big basin. Stir everything until thoroughly blended. When you press the mixture, it should stay together.
Heat the Oil: In a large skillet or frying pan, heat 1/4 inch of vegetable oil over medium-high heat. Drop a tiny bit of the potato mixture into the oil to see if it’s hot enough. The oil is ready if it sizzles.
To fry the fritters, use a spoon or your hands to scoop out two spoonful of the potato mixture at a time and shape it into little patties. Avoid packing the pan too full as you carefully drop the patties into the heated oil. The fritters should be crispy and golden brown after 3–4 minutes on each side.
Drain and Serve: To remove any remaining oil, move the fried fritters to a platter covered with paper towels.
If preferred, top the warm, crispy, cheesy potato fritters with fresh parsley.
Serve these fritters with a dipping sauce, such as sour cream, ranch dressing, or a hot sriracha mayo, for added taste.
