Ingredients:
– 3 potatoes (approximately 300g) 🥔
– Fresh parsley, chopped 🌱
– 3 eggs 🥚🥚🥚
– Chili pepper flakes and black pepper, to taste 🌶️
– 2 tbsp rice flour (wheat flour can be used as well) 🍚
– 1 tsp salt 🧂
– Vegetable oil 🌿
– ~150g cheese (of your choice), grated 🧀
Instructions:
1. Peel and grate the potatoes using a fine grater. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.
2. In a mixing bowl, combine the grated potatoes, chopped fresh parsley, eggs, chili pepper flakes, black pepper, rice flour, and salt. Mix well until you have a thick batter.
3. Heat a bit of vegetable oil in a skillet over medium heat.
4. Scoop a portion of the potato batter into the skillet, forming a pancake. Flatten it with a spatula.
5. Cook the pancake for about 3-4 minutes on each side, or until they are golden brown and crispy.
6. When the pancakes are nearly done, sprinkle a generous amount of grated cheese on top.
7. Allow the cheese to melt and the bottom of the pancake to crisp up before flipping it.
8. Remove the potato pancake from the skillet when both sides are crispy, and the cheese is gooey.
9. Place the pancakes on a paper towel to remove excess oil.
10. Serve your cheesy potato pancakes hot and enjoy!
