3 large potatoes, grated
2 eggs

2 cups cooked and shredded chicken (or ground chicken)
1 small onion, finely chopped
1 clove garlic, minced

½ cup shredded mozzarella cheese
1 tablespoon olive oil

Instructions
Prepare the Potato Mixture
Grate the potatoes and squeeze out excess water using a clean kitchen towel.
In a mixing bowl, combine the grated potatoes, eggs, flour (or breadcrumbs), salt, pepper, and garlic powder. Mix well.
Cook the Chicken Filling
Heat olive oil in a pan over medium heat. Add chopped onions and garlic, sauté until soft.
Add shredded or ground chicken, followed by salt, pepper, paprika, and dried herbs. Stir well and cook for 3–5 minutes.
Remove from heat and mix in shredded cheese (if using). Let it cool slightly.
Assemble the Roll
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
Spread the potato mixture evenly onto the parchment paper in a rectangular shape.
Bake for 15–20 minutes until it sets slightly.
Remove from the oven and evenly spread the chicken filling over the potato base.
Roll and Bake
Using the parchment paper to help, carefully roll the potato layer over the filling to form a log.
Return the roll to the oven and bake for another 15–20 minutes until golden brown and crispy on the outside.
Serve and Enjoy
Let the roll cool slightly before slicing. Garnish with parsley and Parmesan cheese. Serve warm with your favorite dip or sauce!
