Potatoes with Ground Beef

Ingredients

  1. One pound of ground beef
  2. 4 medium potatoes (about 4 cups), chopped
  3. One medium onion, chopped
  4. Two minced garlic cloves
  5. One cup of water or beef broth
  6. One teaspoon of paprika
  7. One teaspoon of dried oregano
  8. To taste, add salt and pepper.
  9. Two tablespoons of vegetable or olive oil
  10. For garnish, use fresh parsley (optional).

Directions

  • Prepare the ground beef by heating the olive oil in a big skillet or pan over medium heat. Cook the garlic and chopped onion for 3–4 minutes, or until the onion is tender. Using a spoon, break up the ground meat before adding it. Cook until no longer pink and browned. If necessary, drain extra fat.
  • Add Potatoes: Mix in the beef broth, paprika, oregano, salt, pepper, and diced potatoes. Mix thoroughly to blend.
  • Simmer: Lower the heat to low and cover the skillet. Simmer until the potatoes are soft and cooked through, stirring periodically, about 20 to 25 minutes. Add a little extra water or broth if the mixture becomes too dry.
  • Serve: Taste and adjust seasoning if necessary when the potatoes are soft. If desired, garnish with fresh parsley.
