Potatoes with Ground Beef
Ingredients
- One pound of ground beef
- 4 medium potatoes (about 4 cups), chopped
- One medium onion, chopped
- Two minced garlic cloves
- One cup of water or beef broth
- One teaspoon of paprika
- One teaspoon of dried oregano
- To taste, add salt and pepper.
- Two tablespoons of vegetable or olive oil
- For garnish, use fresh parsley (optional).
Directions
- Prepare the ground beef by heating the olive oil in a big skillet or pan over medium heat. Cook the garlic and chopped onion for 3–4 minutes, or until the onion is tender. Using a spoon, break up the ground meat before adding it. Cook until no longer pink and browned. If necessary, drain extra fat.
- Add Potatoes: Mix in the beef broth, paprika, oregano, salt, pepper, and diced potatoes. Mix thoroughly to blend.
- Simmer: Lower the heat to low and cover the skillet. Simmer until the potatoes are soft and cooked through, stirring periodically, about 20 to 25 minutes. Add a little extra water or broth if the mixture becomes too dry.
- Serve: Taste and adjust seasoning if necessary when the potatoes are soft. If desired, garnish with fresh parsley.
