Protein Pancake Bites with Cottage Cheese and Banana Oats

Ingredients:
1 ripe banana, mashed
½ cup cottage cheese
1 egg
½ cup rolled oats
½ teaspoon cinnamon
½ teaspoon baking powder
1 teaspoon vanilla extract
1 tablespoon honey or maple syrup (optional)
1 scoop vanilla protein powder (optional)
¼ cup milk (if needed for consistency)
¼ cup mini chocolate chips or blueberries (optional)
Instructions:
Preheat oven to 350°F (175°C). Lightly grease a mini muffin tin or use silicone liners.
Blend or mix together mashed banana, cottage cheese, egg, oats, cinnamon, baking powder, vanilla, and protein powder until smooth. Add milk if the batter is too thick.
Fold in chocolate chips or blueberries if using.
Spoon batter into the mini muffin tin, filling each about ¾ full.
Bake for 12–15 minutes, or until golden brown and set.
Let cool for a few minutes before removing from the tin.
Enjoy warm, or store in the fridge for up to 4 days. You can also freeze them for later!
