Queso pupusas
Components:
Regarding the dough:
- Two cups of maize flour, or masa haring
- One and a half cups of hot water
- Half a teaspoon of salt
Regarding the Filling:
- 1 1/2 cups of cheese, such as mozzarella, quest fresco, or a combination
- Half a cup of refried beans is optional (for extra filling).
Directions:
Get the dough ready:
- Combine the masa haring and salt in a big bowl. Add the warm water a little at a time while mixing until a soft dough forms. Add a little more water if the dough is too dry, and more masa haring if it is too moist.
Split the dough:
- Make 8–10 identical balls out of the dough, each about the size of a golf ball.
Get the filling ready:
- Mash the beans a little if using them. If using beans, mix them with the cheese.
Create the Purposes:
- Flatten a lump of dough into a disc that is approximately half an inch thick. Carefully fold the borders over the filling to close it after placing a tablespoon of the cheese mixture in the center. To create a thick tortilla, gently flatten it one more. Continue with the remaining filling and dough.
Prepare the Purposes:
- A griddle or skillet should be heated to medium heat. Cook each pupas until golden brown and just beginning to crisp, about 3 to 5 minutes per side.
Serve:
- Serve the purposes hot, accompanied by salsa roji (a tomato-based sauce) and cortado (a pickled cabbage slaw).
Advice:
- The sort of cheese can be changed to suit your preferences. Traditional queso fresco is enhanced by the melty texture of mozzarella.
- To avoid the dough from drying out while you work, keep it covered with a moist cloth.
