Components:

  1. An additional cup of all-purpose flour for rolling
  2. One teaspoon of baking powder
  3. Half a teaspoon of salt
  4. Two tablespoons of extra olive oil for cooking
  5. 3/4 cup of hot water, adjusted as necessary
  6. Optional: For added flavor, use fresh herbs like thyme or rosemary; for a savory touch, use garlic powder.

Directions:

  • Combine the dry ingredients: Combine the flour, baking powder, and salt in a big bowl and whisk to combine.
  • Add the moist ingredients: To the dry ingredients, add the warm water and olive oil. To get a soft dough, mix everything together. If the dough is too dry, you might need to add a tablespoon or so additional water at a time. Though not sticky, the dough should be smooth and just a little tacky.
  • To make the dough smooth and elastic, turn it out onto a lightly floured surface and knead it for two to three minutes.
  • Divide the dough into four to six equal sections, then roll them out. Each part should be rolled into a ball and then flattened into thin discs (approximately 1/4 inch thick) using your hands or a rolling pin. They can be as thick or as thin as you choose.
  • Prepare the flatbreads by heating a non-stick frying pan or cast-iron skillet over medium-high heat and adding a little amount of olive oil. When the pan is heated, cook each flatbread for two to three minutes on each side, or until the flatbread has slightly risen and has golden brown spots.
  • To serve, take it out of the pan and put it on a platter. If you’d like, you may brush the flatbreads with a bit more butter or olive oil and season them with salt or herbs.

Optional Changes in Flavor:

Garlic & Herb Flatbread: Before combining the dough, add a teaspoon of garlic powder or freshly minced garlic along with some chopped thyme or rosemary.
Cheese Flatbread: For a cheesy twist, sprinkle some shredded mozzarella or Parmesan cheese over the dough as you lay it out.

This simple and quick flatbread tastes well by itself, with hummus or tzatziki, or as a foundation for pizza toppings. Have fun!
