Ingredients:
- 4 boneless, skinless chicken breasts (or thighs, if preferred) 
- 1 lb baby potatoes, halved or quartered 
- 2 cups broccoli florets 
- 1 red bell pepper, sliced 
- 1 zucchini, sliced 
- 3 tbsp olive oil 
- 1 packet (1 oz) ranch seasoning mix (or homemade: 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp dried dill, 1/2 tsp parsley, salt & pepper) 
- 1/2 cup shredded cheddar cheese (optional) 
- Fresh parsley or chives, for garnish 
- Heavy-duty aluminum foil, for wrapping 
Instructions:
1. Prep the Foil & Oven/Grill:
Preheat grill to medium-high or oven to 400°F (200°C).
Tear 4 large sheets of foil (about 12–16 inches long).
2. Season Chicken & Veggies:
In a large bowl, toss chicken, potatoes, and veggies with olive oil and ranch seasoning until evenly coated.
3. Assemble the Packets:
Place a seasoned chicken breast in the center of each foil sheet. Surround with a mix of vegetables. Fold the foil over the chicken and veggies, sealing tightly to create a packet.
4. Cook:
- Grill: Place packets on grill, close lid, and cook for 25–30 minutes, turning once halfway through. 
- Oven: Bake packets on a baking sheet for 30 minutes, or until chicken is cooked through and potatoes are tender. 
5. Optional Cheese Finish:
Carefully open each packet (watch for steam!) and sprinkle with cheddar cheese. Close packets loosely and let sit for a few minutes to melt.
6. Garnish & Serve:
