Really Easy Air Fryer Banana Bread (Mini Loaf!)

- 1 banana, small to medium (about ⅓ cup), mashed – the riper the better
- 1 egg
- 2 tablespoons brown sugar, I add 2-3 tablespoons depending on my mood!
- 2 tablespoons oil, I’ve used light olive oil and canola and coconut oils. Melted butter works really well, too.¼ cup milk, Any milk works, including non dairy such as almond and soy
- ¾ cup all-purpose flour, I’ve used white, wholemeal, coconut flours, or a mixture + hemp flour. I’ve also used self raising flour instead and skipped the baking soda
- ½ teaspoon baking soda
- 1 pinch salt
- 1 pinch cinnamon or nutmeg, (optional)
- raspberries, blueberries, chocolate chips, coconut, nuts, ½ teaspoon vanilla, (All optional extras!)

The process involves lining a very small ovenproof baking pan, glass dish, or mini loaf pan with baking paper and trimming it. I have used a 5 square inch mini loaf pan as well as a 5 by 3 inch little metal loaf pan. Spritz with a small amount of oil.
Preheat the oven or air fryer to 320 degrees Fahrenheit (160 degrees Celsius).
The egg should be mixed into the mashed banana in a small bowl using a whisk. Once it is done, mix in the milk, sugar, and oil.

Mix the flour, baking soda, and salt together until they are almost completely incorporated. In the event that the mixture appears to be lacking in moisture, add a small amount of additional milk (some flours, such as whole wheat and coconut, are more absorbent than all-purpose flour). Any mix-ins, such as chocolate chips or nuts, should be folded in.
Half a cup of all-purpose flour, half a teaspoon of baking soda, one pinch of cinnamon or nutmeg, raspberries, blueberries, chocolate chips, coconut, nuts, half a teaspoon of vanilla, and one pinch of salt can be included in this recipe.
Once the pan has been prepped, pour the batter into it, and bake it in the oven or air fryer for twenty-five to thirty-five minutes, or until a skewer that has been inserted into the bottom of the cake comes out clean. What is acceptable is a trace amount of stickiness. In my experience, it takes thirty to thirty-five minutes in my air fryer and twenty-five minutes in my oven.
First, let the dish or tin to cool for ten minutes, and then transfer it to a wire rack to continue cooling.
