Recipe for One Pot Lasagna Soup
Components:
- One pound (450 grams) of Italian sausage or ground beef
- One chopped onion
- Three minced garlic cloves
- One 28-ounce can of crushed tomatoes
- Four cups of vegetable or chicken stock
- Two cups of raw pasta, like rotini or campanile
- Two teaspoons of Italian seasoning
- One teaspoon of salt
- Half a teaspoon of black pepper
- Ricotta cheese, one cup
- One cup of mozzarella cheese, shredded
- Garnish with fresh parsley or basil.
- Grated Parmesan cheese for serving is optional.
Directions:
- Cook the Meat: Brown the ground beef or sausage over medium heat in a large pot or Dutch oven. If necessary, drain extra fat.
- Sauté Vegetables: Cook the chopped onion for approximately five minutes, or until it is tender. Add the minced garlic and sauté until fragrant, about 1 minute more.
- Add Tomatoes and Broth: Add the broth and crushed tomatoes. Mix to blend.
- Season with salt, black pepper, and Italian seasoning. Heat the mixture until it boils.
- Cook the Pasta: Add the raw pasta after it has boiled. Lower the heat to a simmer and cook the pasta as directed on the package, which is typically 8 to 10 minutes, or until it is tender.
- After the pasta has done, mix in half of the mozzarella and the ricotta until they are creamy and well blended.
- To serve, spoon the soup into bowls and sprinkle the leftover mozzarella cheese on top. Add some fresh parsley or basil as a garnish, and if you’d like, some Parmesan cheese.
