Recipe for Starchy Crispy Potato Balls
Ingredients:
- Four large, starchy potatoes (Idalic or Russet are ideal)
- Two teaspoons of butter
- 1/4 cup milk (for a deeper flavor, use cream)
- Half a cup of shredded cheese (marble or cheddar are excellent options)
- Half a teaspoon of powdered garlic
- Half a teaspoon of onion powder
- Half a teaspoon of salt
- 1/4 tsp black pepper
- Half a cup of all-purpose flour
- Two huge eggs that have been beaten
- One and a half cups of breadcrumbs (add panko for crunch)
- Canola or vegetable oil for frying
Directions:
1. Get the potatoes cooked:
- Cut the potatoes into cubes after peeling them. For ten to fifteen minutes, or until fork-tender, boil them in salted water.
- While the potatoes are still warm, drain them and mash them.
2. Get the potato mixture ready.
- To the mashed potatoes, add the butter, milk, onion and garlic powders, salt, and pepper. Mix until creamy and smooth.
- Fold the cheese into the mashed potatoes if using. To make handling the mixture easier, allow it to cool slightly.
3. Form the balls of potatoes:
- Using your hands, form a little ball out of roughly 2 tablespoons of the potato mixture.
- Continue until every mashed potato has been shaped into a ball.
4. Give the potato balls some bread:
- Three bowls should be set up at the breading station: one for flour, one for beaten eggs, and one for breadcrumbs.
- Shake off any extra flour after rolling each potato ball in it.
- After dipping it into the beaten eggs, lightly press the breadcrumbs onto it to ensure they adhere.
5. Make the potato balls fried.
- In a saucepan or deep fryer, heat the oil to approximately 350°F (175°C).
- Avoid packing the skillet too full by frying the potato balls in batches. Fry until golden brown and crispy, stirring regularly, 2 to 3 minutes.
- Using a slotted spoon, remove the potato balls and set them on a paper towel-lined dish to drain any remaining oil.
6. Offer:
- Serve the hot, crispy potato balls with your preferred dipping sauce. They go nicely with sour cream, ketchup, or a hot aioli.
