Ingredients:
1 lb (450g) large shrimp, peeled and deveined (tails on or off)
4 tbsp unsalted butter
2 tbsp olive oil
4 garlic cloves, minced
½ cup dry white wine (such as Pinot Grigio or Sauvignon Blanc)
1 tbsp lemon juice (freshly squeezed)
1 tsp lemon zest
½ tsp red pepper flakes (optional, for heat)
¼ cup fresh parsley, finely chopped
Salt and black pepper, to taste
½ tsp paprika (optional, for color)
8 oz (225g) linguine or fettuccine pasta (optional, for serving)
¼ cup grated Parmesan cheese (optional, for garnish)
Instructions:
Prepare the Shrimp
If using frozen shrimp, thaw them in cold water and pat dry with paper towels.
Season the shrimp lightly with salt, black pepper, and paprika (if using).
Cook the Pasta (Optional)
If serving with pasta, cook 8 oz linguine or fettuccine according to package instructions until al dente. Drain and set aside.
Sauté the Shrimp
In a large skillet, heat 2 tbsp olive oil and 2 tbsp butter over medium-high heat.
Once the butter melts, add the shrimp in a single layer. Cook for 1-2 minutes per side until pink and opaque. Remove shrimp and set aside.
Make the Garlic Butter Sauce
In the same skillet, add the remaining 2 tbsp butter and minced garlic. Sauté for 30 seconds until fragrant.
Pour in the ½ cup white wine and simmer for 2-3 minutes to reduce slightly.
Stir in 1 tbsp lemon juice, 1 tsp lemon zest, and ½ tsp red pepper flakes (if using).
Combine and Finish
Return the cooked shrimp to the skillet and toss in the sauce for 1 minute to coat evenly.
Sprinkle with ¼ cup chopped parsley and adjust seasoning with salt and pepper if needed.
Serve
If using pasta, divide it among plates and top with the shrimp and sauce.
Garnish with Parmesan cheese and extra parsley if desired.
Serve immediately with crusty bread or a side salad.
Tips for the Best Shrimp Scampi:
Use fresh shrimp for the best texture and flavor.
Don’t overcook the shrimp—they should be just pink and curled.
Adjust the garlic to taste—add more if you love a strong garlic flavor.
