Rice Casserole, Broccoli, and Cheesy Chicken

Components:

  1. Two cups of cooked chicken, either shredded or diced
  2. One and a half cups of cooked brown or white rice
  3. Two cups of prepared or steamed broccoli florets
  4. One can (10.5 oz) of cream of chicken soup (or, for a variation, cream of mushroom soup)
  5. One cup of sour cream
  6. One and a half cups of split cheddar cheese shreds
  7. One teaspoon of powdered garlic
  8. One teaspoon of powdered onion
  9. To taste, add salt and pepper.
  10. ¼ cup milk (optional, depending on the consistency you want)
  11. ½ cup broken crackers or breadcrumbs (optional, for topping)
  12. One tablespoon of optional butter to grease the casserole dish

Directions:

  • Set the oven’s temperature to 350°F (175°C). Apply butter or nonstick spray to a 9 x 13-inch casserole dish to grease it.
  • prepare the rice and chicken: Follow the directions on the package to prepare the rice and, if you haven’t already, grill, bake, or use leftover chicken.
  • Steam the broccoli: Steam or microwave the broccoli florets for 3–5 minutes with a little water, or 6–7 minutes on the stovetop, until they are tender.
  • To make the sauce, put the cream of chicken soup, sour cream, milk, onion powder, and garlic powder in a big bowl. Blend thoroughly until smooth. To taste, add salt and pepper.
  • Mix the ingredients together: Add the steamed broccoli, cooked rice, and cooked chicken to the sauce mixture and stir. Stir until thoroughly blended, then add 1 cup of shredded cheddar cheese.
  • To assemble the casserole, transfer the mixture into the casserole dish that has been prepared and level it out. Add the remaining ½ cup of the cheddar cheese shreds on top.
  • Add the topping (optional): Scatter broken crackers or breadcrumbs on top of the cheese for a crispy finish. For added crunch, you can also spread melted butter on top of the breadcrumbs.
  • The casserole should be hot and bubbling and the cheese should be melted and golden brown after 25 to 30 minutes of baking in a preheated oven.
  • Before serving, allow the dish to cool for a few minutes. Savor this rice casserole with cheesy chicken and broccoli!
