Rice Casserole, Broccoli, and Cheesy Chicken
Components:
- Two cups of cooked chicken, either shredded or diced
- One and a half cups of cooked brown or white rice
- Two cups of prepared or steamed broccoli florets
- One can (10.5 oz) of cream of chicken soup (or, for a variation, cream of mushroom soup)
- One cup of sour cream
- One and a half cups of split cheddar cheese shreds
- One teaspoon of powdered garlic
- One teaspoon of powdered onion
- To taste, add salt and pepper.
- ¼ cup milk (optional, depending on the consistency you want)
- ½ cup broken crackers or breadcrumbs (optional, for topping)
- One tablespoon of optional butter to grease the casserole dish
Directions:
- Set the oven’s temperature to 350°F (175°C). Apply butter or nonstick spray to a 9 x 13-inch casserole dish to grease it.
- prepare the rice and chicken: Follow the directions on the package to prepare the rice and, if you haven’t already, grill, bake, or use leftover chicken.
- Steam the broccoli: Steam or microwave the broccoli florets for 3–5 minutes with a little water, or 6–7 minutes on the stovetop, until they are tender.
- To make the sauce, put the cream of chicken soup, sour cream, milk, onion powder, and garlic powder in a big bowl. Blend thoroughly until smooth. To taste, add salt and pepper.
- Mix the ingredients together: Add the steamed broccoli, cooked rice, and cooked chicken to the sauce mixture and stir. Stir until thoroughly blended, then add 1 cup of shredded cheddar cheese.
- To assemble the casserole, transfer the mixture into the casserole dish that has been prepared and level it out. Add the remaining ½ cup of the cheddar cheese shreds on top.
- Add the topping (optional): Scatter broken crackers or breadcrumbs on top of the cheese for a crispy finish. For added crunch, you can also spread melted butter on top of the breadcrumbs.
- The casserole should be hot and bubbling and the cheese should be melted and golden brown after 25 to 30 minutes of baking in a preheated oven.
- Before serving, allow the dish to cool for a few minutes. Savor this rice casserole with cheesy chicken and broccoli!
Other ingredients, such as bell peppers, mushrooms, or various cheeses, can be added to this casserole to make it unique. It’s also a fantastic leftover!
