Rich, Creamy Marry Me Chicken Soup
Ingredients
2 tbsp olive oil
1 diced onion
3 minced garlic cloves
1 tsp dried oregano
1/2 tsp red pepper flakes (optional)
4 cups chicken broth
1 cup heavy cream
1/2 cup Parmesan cheese
1/2 cup sun-dried tomatoes, chopped
2 cups shredded chicken
2 cups fresh spinach
Salt and pepper
Heat olive oil in a pot. Sauté onion for 3-4 minutes, then add garlic, oregano, and red pepper flakes. Cook until fragrant.
Add chicken broth and bring to a simmer. Stir in cream and Parmesan until smooth
Add chicken and sun-dried tomatoes. Simmer for 5-7 minutes
Stir in spinach until wilted. Adjust seasoning with salt and pepper
Serve with garnishes and crusty bread.
