3 medium-sized rainbow beets (golden, red, and striped), peeled and diced
2 tbsp olive oil
1/2 tsp sea salt
1/4 tsp black pepper
2 cups mixed greens or baby spinach
1 ripe avocado, sliced
2 large eggs
1 tbsp white vinegar (for poaching eggs)
2 tbsp crumbled goat cheese or feta (optional)
2 tbsp pumpkin seeds or sunflower seeds (optional)
Fresh herbs (parsley, dill, or chives) for garnish
For the Dressing:
2 tbsp tahini
1 tbsp fresh lemon juice
1 tsp honey or maple syrup (optional)
2–3 tbsp warm water (to thin the dressing)
Pinch of salt and pepper
Instructions:
Roast the Beets:
Preheat the oven to 400°F (200°C).
Toss the diced beets with olive oil, salt, and pepper. Spread them on a lined baking sheet.
Roast for 25–30 minutes, flipping halfway, until tender and slightly caramelized.
Prepare the Dressing:
Whisk together tahini, lemon juice, honey (if using), salt, and pepper. Add warm water a little at a time until the dressing reaches your desired consistency.
Poach the Eggs:
Fill a saucepan with water and bring it to a gentle simmer. Add white vinegar.
Crack an egg into a small bowl. Create a gentle whirlpool in the water with a spoon and slide the egg in.
Poach for 3–4 minutes, then remove with a slotted spoon. Repeat with the second egg.
Assemble the Bowl:
Divide the mixed greens or spinach between two bowls.
Top with roasted beets, avocado slices, and poached eggs.
Drizzle with the tahini dressing, and sprinkle with goat cheese, seeds, and fresh herbs if desired.
