Roasted Vegetables and Sausage with Garlic and Herb Seasoning
This recipe is a perfect balance of savory sausage and crisp-tender roasted vegetables, seasoned with a blend of garlic and herb spices to create a delicious, healthy, and easy meal!
Ingredients:
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 orange bell pepper, chopped
1 zucchini, sliced
1 cup broccoli florets
1 bunch asparagus, trimmed and cut into 2-inch pieces
1 cup mushrooms, sliced
2 sausage links (preferably smoked or Italian sausage), sliced into 1/2-inch pieces
2 tablespoons extra virgin olive oil
1 teaspoon garlic powder
1 teaspoon chili powder
1 teaspoon Mrs. Dash Onion & Herb seasoning
1 teaspoon Mrs. Dash Vegetable seasoning
Salt and pepper to taste
Instructions:
1. Preheat your oven to 400°F (200°C).
2. Chop the red, yellow, and orange bell peppers into bite-sized pieces.
3. Slice the zucchini, cut the asparagus into 2-inch pieces, and slice the mushrooms.
4. Slice the sausage into 1/2-inch pieces.
5. In a large bowl, combine all the chopped vegetables and sausage slices.
6. Drizzle with the extra virgin olive oil and toss to coat evenly.
7. Sprinkle garlic powder, chili powder, Mrs. Dash Onion & Herb, and Mrs. Dash Vegetable seasoning over the mixture.
8. Add salt and pepper to taste, and toss again to ensure everything is well-seasoned.
9. Spread the vegetable and sausage mixture in a single layer on a large baking sheet.
10. Avoid overcrowding to ensure even roasting.
11. Bake in the preheated oven for 8 minutes.
12. After 8 minutes, flip the vegetables and sausage to ensure even cooking.
13. Return to the oven and bake for an additional 8 minutes, or until the vegetables are tender yet still crisp and the sausage is heated through.
14. Remove from the oven and serve immediately.
