Roasted Veggie & Hummus Bowl
A colorful, nourishing Mediterranean-style bowl made with roasted vegetables, creamy hummus, and fresh herbs. Perfect as a healthy lunch or light dinner.
Ingredients
For the Roasted Vegetables
1 zucchini, sliced
2 medium carrots, halved lengthwise
1 cup cherry tomatoes
1 medium beet, peeled and diced
1 yellow bell pepper, diced
1 cup canned chickpeas, drained
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
Salt and black pepper, to taste
For the Bowl Base and Toppings
1 cup hummus (classic or flavored)
1 tablespoon extra virgin olive oil
1 tablespoon chopped parsley or cilantro
Optional: lemon wedges or a pinch of za’atar for garnish
Instructions
- Prepare the Vegetables
Preheat your oven to 400°F (200°C). Place each vegetable (zucchini, carrots, tomatoes, beets, bell pepper) in separate small bowls. Toss them individually with olive oil, smoked paprika, garlic powder, salt, and pepper. Keeping them separate helps each vegetable roast evenly without flavor overpowering. - Roast the Vegetables
Line a baking tray with parchment paper. Arrange the seasoned vegetables on the tray in separate sections, or use two trays if needed. Roast for 25–30 minutes, flipping halfway through, until tender and lightly caramelized. - Prepare the Chickpeas
You can roast the chickpeas on the same tray or warm them separately in a skillet with a small drizzle of olive oil and a pinch of seasoning. Cook until slightly crisp. - Build the Bowl
Spoon a generous layer of hummus into the center of a bowl and spread it into a swirl. Arrange the roasted vegetables and chickpeas around the hummus in neat sections for a colorful presentation. - Finishing Touches
Drizzle the bowl with extra virgin olive oil. Sprinkle chopped parsley or cilantro over the top. Add lemon wedges or a touch of za’atar if desired.
