Rolls with cinnamon and peach cobbler
Ingredients
Regarding the Filling:
- Four cups of sliced peaches, either fresh or frozen (approximately four to five medium peaches)
- Half a cup of granulated sugar (to taste)
- One tablespoon of corn flour
- One teaspoon of vanilla extract
- One teaspoon of cinnamon
- One tablespoon of optional lemon juice
Regarding the topping:
- Two cans of chilled cinnamon rolls (8 oz each)
- Half a cup of melted butter (1 stick)
- One teaspoon of cinnamon
- 1/4 cup brown sugar, if desired
- Half a cup of chopped walnuts or pecans (optional)
- Cinnamon roll icing (included in the packets)
Directions
Warm up the oven:
- Set the oven temperature to 175°C (350°F). A 9 x 13-inch baking dish should be greased.
Get the peach filling ready:
- Combine the peach slices, corn flour, granulated sugar, vanilla essence, cinnamon, and lemon juice (if using) in a large mixing basin. Toss to coat the peaches completely.
Move to the Baking Dish:
- Evenly distribute the peach mixture after pouring it into the baking dish.
Get the cinnamon roll topping ready.
- Cut each cinnamon bun into quarters after opening it. Evenly distribute the pieces on top of the peach filling.
Add the cinnamon and butter:
- Combine the brown sugar (if using), cinnamon, and melted butter in a small bowl. Evenly drizzle the cinnamon roll pieces in the baking dish with this mixture.
Nuts are optional.
- Top the slices of cinnamon roll with chopped pecans or walnuts, if using.
Bake:
- Bake in a preheated oven for 25 to 30 minutes, or until the peach filling is bubbling and the cinnamon rolls are golden brown.
Drizzle and cool:
- After baking, take it out of the oven and give it some time to cool. While the cinnamon buns are still warm, drizzle the icing over the top.
Serve:
- Serve warm, either by itself or, for an added treat, with a dollop of vanilla ice cream!
Advice
- Frozen vs. Fresh Peaches: You may use frozen peaches without thawing them beforehand, however you might need to extend the baking time a little.
- Variations: For a fruit mixture, you can mix in blueberries or add spices like ginger or nutmeg to the peach filling.
- Storage: Keep any leftovers in the fridge for up to three days in an airtight container. Before serving, reheat in the microwave or oven.
