Ingredients:
For the Chicken:
- 4 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1 tablespoon butter
- Salt and black pepper, to taste
- One tablespoon of freshly chopped rosemary (or 1 teaspoon of dried rosemary)
- One tablespoon of fresh thyme leaves (or 1 teaspoon of dried thyme)
- 1 whole garlic bulb, cloves separated and peeled
- 1 cup chicken broth
For the Asiago Gravy:
- 2 tablespoons butter
- 1 tablespoon flour
- 1 cup chicken broth
- ½ cup heavy cream
- ½ cup grated Asiago cheese
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish
Directions:

Add Garlic and Roast: Scatter the peeled garlic cloves over the - chicken in the pan. Add one cup of chicken stock. Place the pan in the oven that has been warmed, and roast it for 25 to 30 minutes, or until the chicken is cooked through and the garlic is soft.
- Make the Asiago Gravy: Make the gravy while the chicken roasts. Melt two tablespoons of butter in a medium saucepan over medium heat. To create a roux, mix in the flour gradually and cook for 1 to 2 minutes while stirring continuously.Add the heavy cream after gradually adding the chicken broth while whisking constantly to avoid clots. After bringing the mixture to a low simmer, cook it for three to five minutes, or until it has slightly thickened.
- Season and Add Asiago: Add the shredded Asiago cheese and stir until it melts and becomes smooth. Season with salt and freshly cracked black pepper to taste and adjust the gravy’s flavor. Until the chicken is done, keep the gravy warm over low heat.
