Sausage and Potato Casserole

Ingredients:
1 pound of ground sausage (Italian or breakfast sausage)
4 cups of diced potatoes (or frozen hash browns)
1 small onion, diced
1 cup shredded cheddar cheese
1 cup milk (or heavy cream for a richer dish)
1/2 cup sour cream (optional, for creaminess)
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
2 tablespoons olive oil
Fresh parsley or green onions for garnish (optional)
Instructions:
Preheat your oven to 375°F (190°C).
In a large skillet, heat 1 tablespoon of olive oil over medium heat.
Add the ground sausage and cook, breaking it up with a spoon, until browned and fully cooked (about 7-10 minutes).
Remove excess grease if needed, and set the cooked sausage aside.
In the same skillet, add another tablespoon of olive oil if needed.
Add the diced onion and sauté until softened and translucent (about 4-5 minutes). If you’re using frozen hash browns, skip this step.
If you’re using fresh diced potatoes, sauté them in the same skillet for about 10 minutes until slightly tender.
You can also roast them or just use them raw in the casserole if you prefer a longer cook time.
In a large mixing bowl, combine the cooked sausage, sautéed onions, potatoes (or hash browns), garlic
powder, paprika, salt, and pepper.
Stir in the shredded cheese, sour cream (optional), and milk, and mix well.
Transfer the mixture into a greased 9×13-inch casserole dish.
Spread it out evenly.
Cover the casserole with aluminum foil and bake for 45 minutes.
After 45 minutes, remove the foil and bake for an additional 15 minutes, or until the casserole is bubbly and the potatoes are tender.
Let the casserole cool slightly before serving.
Garnish with fresh parsley or green onions, if desired.
