Sausage & Potato Casserole

Ingredients :
  1. 450 gm mince sausage
  2. 6 cups of potatoes, peeled and cubed
  3. 1 medium onion, chopped
  4. 3 garlic cloves, minced
  5. 2 cups of shredded Feta cheese
  6. 1 cup grated Parmesan cheese
  7. 60 g Olive Oil
  8. 30 g of all-purpose flour
  9. 500 ml of milk
  10. 1/2 teaspoon of paprika
  11. 1/2 teaspoon of dried thyme
  12. Salt and black pepper to taste
  13. Minced fresh parsley (for garnish)
Instructions:
Preheat the oven: Preheat your oven to 175 °C (350 °F). Grease a 23×33 cm baking dish.
Cooking the sausage: In a large skillet, cook the sausage over medium heat until it is well golden brown. Take out and make a booking
Sauté the onions and garlic: In the same skillet, add the chopped onions and cook until tender, about 3-4 minutes. Add the minced garlic and cook for 1 min more.
Prepare the cheese sauce: In a medium saucepan, pour oil over medium heat. Add flour and cook for 1-2 minutes until mixture is foamy. Gradually incorporate milk while whipping to avoid lumps. Keep cooking until the sauce thickens. Add paprika, thyme, salt and black pepper. Add cheese  until melted and smooth.
Assemble the casserole: In a greased baking dish, arrange the cubed potatoes, cooked sausage, and sautéed onions. Pour the cheese sauce evenly on top.
Cooking: Cover the dish with aluminum foil and bake for 40-45 minutes. Remove the paper and continue cooking for an additional 10-15 minutes, or until the potatoes are tender and the top is golden and bubbly.
Garnish and Serve: Sprinkle some fresh parsley before serving.
