Ingredients
For the Sausage Rolls:

250g (8–9 oz) sausage meat or ground pork sausage
1 garlic clove (minced)
1 tsp onion powder
1 tsp dried thyme (or parsley)
½ tsp smoked paprika (optional, for extra flavor)
Salt & black pepper, to taste
1 egg (beaten, for egg wash)
Sesame seeds or poppy seeds (optional, for topping)
For the Honey Mustard Sauce:
3 tbsp Dijon mustard (or yellow mustard)
2 tbsp honey
1 tbsp mayonnaise (optional, for creaminess)
½ tsp apple cider vinegar or lemon juice (optional, for tang)
Instructions
Prepare the Filling
In a bowl, mix sausage meat with garlic, onion powder, thyme, paprika, salt, and pepper.
Stir until well combined.
Prepare the Pastry
Lightly flour your surface and roll out the puff pastry into a rectangle (if needed).
Cut the pastry into 2 equal strips.
Place sausage mixture in a long log down the center of each strip.
Roll and Cut
Brush one edge of the pastry strip with beaten egg.
Fold the pastry over the sausage, pressing the edges to seal tightly.
Cut each long roll into 6–7 mini rolls.
Place them seam-side down on a lined baking tray.
Bake
Preheat oven to 400°F (200°C).
Brush the tops of rolls with beaten egg.
Sprinkle sesame or poppy seeds if desired.
Bake for 20–25 minutes, until golden brown and puffed.
Make the Honey Mustard Sauce
In a small bowl, whisk together Dijon mustard, honey, mayonnaise, and vinegar/lemon juice until smooth.
Taste and adjust sweetness or tanginess as preferred.
Serve
Let sausage rolls cool for 5 minutes before serving.
Serve warm with the honey mustard dipping sauce on the side.
