Recipe for Sautéed Broccoli and Mushroom Stir-Fry
This is a quick and nutritious stir-fry dish for sautéed mushrooms and broccoli. It’s a tasty, simple recipe that works well as a light main course or as a side.
Components:
- Two cups of frozen or fresh broccoli florets
- One pound of sliced white, cremini, or button mushrooms
- Two tablespoons of olive oil (for added taste, use sesame oil)
- Two minced garlic cloves
- One tablespoon of soy sauce (or, if gluten-free, tamari)
- One tablespoon of optional oyster sauce (for added umami flavor)
- One tablespoon of rice vinegar
- One teaspoon of sesame oil (optional; adds flavor)
- Half a teaspoon of optional red pepper flakes (for heat)
- To taste, add salt and pepper.
- One tablespoon of optional sesame seeds for garnish
- Two chopped green onions (optional; garnish)
Directions:
1. Get the broccoli ready:
- When using fresh broccoli, blanch or steam the florets in boiling water for three to four minutes, or until they are crisp but still bright green. Simply defrost the broccoli and drain any extra water if you’re using frozen broccoli.
- After draining, put the broccoli aside.
2. Add the mushrooms to a sauté.
- In a large skillet or wok, heat the olive oil (or sesame oil) over medium-high heat.
- Stirring occasionally, add the sliced mushrooms to the pan and cook for 5 to 7 minutes, or until they are golden brown and have shed their moisture. As they cook, season with a little of salt and pepper.
3. Include the garlic:
- In the pan with the mushrooms, add the minced garlic and cook for a further one to two minutes, or until fragrant.
4. Broccoli should be stir-fried:
- When the mushrooms are in the pan, add the broccoli florets. To allow the broccoli to heat through and absorb the flavors, cook for a further three to four minutes after giving it a good stir.
5. Include the sauces:
- Add the rice vinegar, soy sauce, oyster sauce (if using), and sesame oil (if using). Allow the flavors to merge by stirring everything together and cooking for a further one to two minutes. Add the red pepper flakes now if you want your food spicy.
6. The Last Seasoning:
- If necessary, taste and add additional soy sauce, salt, or pepper to suit the seasoning.
7. Decorate and Present:
- Spoon the stir-fry onto plates for dishing. If desired, garnish with chopped green onions and sesame seeds.
