Savory Chicken & Mushroom Crepes Recipe
Ingredients:
- – 1 cup all-purpose flour
- – 1 cup milk
- – 2 large eggs
- – 1/4 teaspoon salt
- – 2 tablespoons melted butter
- – Water as needed for thinning
- – 2 cups cooked chicken, shredded
- – 2 cups mushrooms, sliced
- – 1 small onion, diced
- – 2 cloves garlic, minced
- – 2 tablespoons butter
- – 1 cup chicken broth
- – 1/2 cup heavy cream
- – 1 teaspoon thyme
- – Salt and pepper to taste
- – 1/4 cup parmesan cheese
- – Fresh parsley for garnish
Instructions:
1. Prepare the batter for crepes:
Smoothly blend the flour, milk, eggs, salt, and melted butter.
Let it sit for fifteen minutes.
To get the proper consistency, thin with water if needed.
2. Prepare the filling by sautéing the onions and mushrooms in butter until they turn brown. After that, sauté for one minute after adding the garlic.
Stir in the chicken, broth, cream, and seasonings.
The sauce should thicken after simmering.
3. Get a nonstick skillet hot over medium heat in order to make the crepes. Pour in 1/4 cup of batter. To coat the pan, swirl. Cook until the edges start to become golden. Flip quickly and fry the second side as well.
4. Assemble: Place each crepe on a baking sheet after stuffing it with chicken mixture and rolling it up. Place the parmesan cheese on top and melt it in the oven for two to three minutes.
5. Serve: Serve hot, garnished with fresh parsley.
