Savory Herbed Chicken Over Roasted Veggie Penne (Air Fryer Recipe)
Introduction
This wholesome, flavorful dish brings together tender herb-marinated chicken, roasted vegetables, and al dente penne pasta, all drizzled with a light olive oil and herb dressing. Ingredients (Serves 2–3)
For the Herbed Chicken:
2 boneless, skinless chicken breasts or thighs
1 tbsp olive oil
1 tsp Italian seasoning
½ tsp garlic powder
½ tsp onion powder
Salt & pepper to taste
Juice of ½ lemon (optional for brightness)
For the Roasted Veggies:
1 zucchini, chopped
1 red bell pepper, chopped
½ red onion, sliced
1 cup cherry tomatoes, halved
1 tbsp olive oil
½ tsp dried thyme
½ tsp oregano
Salt & pepper
For the Pasta:
6 oz penne pasta, cooked and drained
1 tbsp olive oil or butter (for tossing)
1 tbsp grated Parmesan (optional)
Fresh basil or parsley (for garnish)
Prep the Chicken
Pat chicken dry. Rub with olive oil, Italian seasoning, garlic powder, onion powder, salt, pepper, and lemon juice.
Let marinate for 15–30 minutes if time allows.
Roast the Veggies
Toss zucchini, bell pepper, onion, and tomatoes in olive oil, thyme, oregano, salt, and pepper.
Preheat air fryer to 390°F (200°C).
