Total time: ~50 minutes
Ingredients
For the Meatloaf:
1 lb ground beef (80/20 for best flavor)
1/2 lb ground pork (or use all beef)
1/2 cup breadcrumbs (plain or Italian-style)
1/4 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1 egg
2 tbsp ketchup
1 tbsp Worcestershire sauce
1 tsp Dijon mustard
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme (optional)
For the Caramelized Onion Gravy:
2 large yellow onions, thinly sliced
2 tbsp butter
1 tbsp olive oil
2 tsp brown sugar
1 tbsp flour
1 1/4 cups beef broth (low-sodium preferred)
Salt and pepper, to taste
1/2 tsp balsamic vinegar (optional, for depth)
Instructions
Prepare the Meatloaf Mixture
In a large bowl, combine the breadcrumbs and milk. Let sit for 2–3 minutes to soak.
Add the ground beef, ground pork, onion, garlic, egg, ketchup, Worcestershire sauce, mustard, salt, pepper, and thyme.
Mix gently with clean hands or a spoon until just combined. Avoid overmixing for a tender texture.
Shape & Air Fry
Form the mixture into a loaf shape (about 7” x 3”) and place on a foil sling or air fryer-safe baking dish.
Preheat your air fryer to 370°F (188°C) for 3 minutes.
Air fry the meatloaf at 370°F for 30–35 minutes, or until the internal temperature reaches 160°F (71°C).
Let it rest for 5–10 minutes before slicing to keep it juicy.
Optional: Brush the top with extra ketchup in the last 5 minutes for a tangy glaze.
While the Meatloaf Cooks: Make the Caramelized Onion Gravy
In a skillet over medium heat, melt butter and olive oil.
Add sliced onions and stir to coat. Cook slowly for 15 minutes, stirring every few minutes.
Add brown sugar and a pinch of salt. Continue cooking until onions are deeply golden and soft, about 5 more minutes.
Sprinkle in the flour, stirring for 1 minute to cook off the raw taste.
Slowly whisk in the beef broth. Let simmer until thickened, about 4–5 minutes.
Season with salt, pepper, and optional balsamic vinegar for richness.
