Simple Chicken and Potato Bake
Ingredients:
- 2 chicken breasts

- 3 potatoes

- 1 onion

- 2 eggs

- Salt & black pepper, to taste


- 1/2 tsp sweet paprika

- 470ml (2 cups) heavy cream

- 1 tsp Herbes de Provence

- 1/4 tsp Nutmeg

- 1 tbsp butter or olive oil

- Mozzarella cheese for topping

- 2 tomatoes (optional)

- Parsley for garnish (optional)

Instructions:
- Slice potatoes
and onion
. - In a bowl, whisk eggs
, season with salt, pepper, and paprika. - Layer potatoes and onion in a baking dish, pour egg mixture over.
- Place chicken breasts
on top, season with Herbes de Provence, Nutmeg, and more salt & pepper. - Pour heavy cream
over the chicken. - Dot with butter or drizzle with olive oil
. - Bake at 380°F/190°C for 1 hour.
- Sprinkle with mozzarella cheese
, bake until melted and golden. - Garnish with tomatoes
and parsley
if desired.
