Simple Chicken and Potato Bake

Ingredients:
  • 2 chicken breasts 🐔
  • 3 potatoes 🥔
  • 1 onion 🧅
  • 2 eggs 🥚
  • Salt & black pepper, to taste 🧂🌶️
  • 1/2 tsp sweet paprika 🌶️
  • 470ml (2 cups) heavy cream 🥛
  • 1 tsp Herbes de Provence 🌿
  • 1/4 tsp Nutmeg 🌰
  • 1 tbsp butter or olive oil 🧈
  • Mozzarella cheese for topping 🧀
  • 2 tomatoes (optional) 🍅
  • Parsley for garnish (optional) 🌱
👩‍🍳 Instructions:
  1. Slice potatoes 🥔 and onion 🧅.
  2. In a bowl, whisk eggs 🥚, season with salt, pepper, and paprika.
  3. Layer potatoes and onion in a baking dish, pour egg mixture over.
  4. Place chicken breasts 🐔 on top, season with Herbes de Provence, Nutmeg, and more salt & pepper.
  5. Pour heavy cream 🥛 over the chicken.
  6. Dot with butter or drizzle with olive oil 🧈.
  7. Bake at 380°F/190°C for 1 hour.
  8. Sprinkle with mozzarella cheese 🧀, bake until melted and golden.
  9. Garnish with tomatoes 🍅 and parsley 🌱 if desired.
