  3. One spoonful of baking powder
  4. Half a teaspoon of salt
  5. One cup of milk
  6. Half a cup of melted butter or vegetable oil
  7. Two huge eggs
  8. One teaspoon of vanilla extract

Optional Add-ons

  1. One cup of your preferred fruit, such as dried fruit, chopped almonds, blueberries, or chocolate chips.

Directions

  • Preheat Oven: Set the oven temperature to 375°F, or 190°C. Grease or line a muffin tray with paper liners.
  • Combine Dry Ingredients: Whisk together the flour, baking powder, sugar, and salt in a large bowl.
  • Mix Wet Ingredients: Put the milk, oil, eggs, and vanilla essence in a separate bowl. Mix thoroughly with a whisk.
  • Mix: Add the liquid components to the dry ones. Take care not to overmix; stir just until incorporated. At this point, fold in any mix-ins you may be using.
  • Fill Muffin Tin: Fill each muffin cup about two-thirds of the way to the top with batter.
  • Bake: Bake for 15 to 20 minutes, or until the tops are brown and a toothpick inserted in the center comes out clean.

Cool: After a few minutes of cooling in the pan, move the muffins to a wire rack to finish cooling.

Ideas for Customization

  • Add 1 cup of frozen or fresh blueberries to the blueberry muffins.
  • Add 1 cup of chocolate chips and fold to make chocolate chip muffins.
  • Banana Muffins: Add a little cinnamon and replace the sugar with 1 cup of mashed ripe bananas.
  • Savory Muffins: For a savory touch, add cheese, cooked veggies, or herbs.
  • Savor your freshly baked muffins! They are excellent for a snack or breakfast.
