Description

Table of Contents

Slow Cooker Cabbage and Potatoes is a simple, hearty comfort meal that transforms humble ingredients into a delicious and satisfying dish. Tender cabbage wedges slowly cook over chunky potatoes while butter and seasoning melt together to create a rich, savory flavor. As everything cooks in the slow cooker, the vegetables soften and absorb the buttery broth, producing a cozy meal that tastes like classic home cooking.

This dish is perfect for busy weeknights or when you want a warm, filling dinner without spending much time in the kitchen. With just a handful of ingredients and minimal prep, the slow cooker does all the work for you. The result is tender cabbage, creamy potatoes, and a savory aroma that fills the whole kitchen.

Time

Prep Time: 10 minutes
Cook Time: 4–6 hours
Total Time: About 4–6 hours

 Ingredients (Serves 4–6)

  • 1 medium green cabbage, cut into wedges

  • 4 medium potatoes, quartered

  • 1 small onion, sliced

  • 3 tablespoons butter

  • 1 teaspoon garlic powder

  • 1 teaspoon salt (adjust to taste)

  • ½ teaspoon black pepper

  • 1 cup vegetable broth or chicken broth

Optional additions:

  • 1 teaspoon smoked paprika for extra flavor

  • Cooked sausage or bacon for a heartier meal

Instructions

Start by preparing the vegetables. Wash the potatoes well and cut them into large chunks or quarters. Remove the tough outer leaves of the cabbage and cut the head into thick wedges, keeping the core intact so the wedges hold their shape.

Place the quartered potatoes in the bottom of the slow cooker. This layer helps them cook evenly and absorb the delicious juices that develop during cooking.

Next, scatter the sliced onion over the potatoes. Sprinkle the garlic powder, salt, and black pepper evenly across the vegetables.

Carefully stack the cabbage wedges on top of the potatoes. The cabbage may seem like a lot at first, but it will shrink as it cooks.

Pour the vegetable or chicken broth around the edges of the slow cooker. Cut the butter into small pieces and place it over the cabbage wedges.

Cover the slow cooker with the lid and cook on LOW for 5–6 hours or on HIGH for 3–4 hours, until the potatoes are tender and the cabbage is soft and flavorful.

About halfway through cooking, you can gently spoon some of the broth over the cabbage to keep it moist and evenly seasoned.

🍽 Serving

Once the vegetables are tender, carefully scoop the cabbage and potatoes onto plates and spoon some of the buttery broth over the top. This dish pairs wonderfully with roasted meats, sausages, or grilled chicken, but it’s also satisfying enough to serve as a simple vegetarian main meal.

The flavors are comforting, rustic, and perfect for a cozy homemade dinner that everyone will ask for again.
