Smoked Sausage Burnt Ends Recipe
Ingredients:
- – 2 pounds smoked sausage (kielbasa or similar)
- – 1/2 cup brown sugar
- – 2 tablespoons paprika
- – 1 tablespoon black pepper
- – 1 tablespoon garlic powder
- – 1 teaspoon cayenne pepper
- – 1 cup BBQ sauce
- – 1/4 cup honey
- – 2 tablespoons butter
- – Fresh jalapeños for garnish (optional)
Directions:
1. Get the sausage ready:
Slice the sausage into 1-inch pieces.
Use paper towels to pat dry, then leave at room temperature for fifteen minutes.
2. Add seasoning to the meat.
In a bowl, combine brown sugar and all the dry spices. Thoroughly coat the sausage pieces with the seasoning mix.
To allow flavors to absorb, let it rest for ten minutes.
3. Let the sausage smoke:
Set the smoker to 250°F. Put the seasoned sausage pieces inside. Smoke for one and a half hours, or until the pieces start to bark.
4. Prepare the glaze:
In a saucepan, add BBQ sauce, honey, and butter. Heat until the butter melts and the sauce is thoroughly mixed. Keep warm until you’re ready to use it.
5. Complete and present:
Move the smoked sausage to a cast-iron pan, cover the sausage pieces with warm glaze, and then put the skillet back in the smoker for 15 to 20 minutes, or until the sauce is sticky. If you’d like, garnish with sliced jalapeños.
