Smothered Chicken
Introduction
Smothered Chicken is a classic Southern-style dish where seasoned chicken is pan-seared until golden, then “smothered” in a deeply flavorful gravy made with onions, garlic, and broth. Slow simmering lets the chicken soak up all that goodness, making it incredibly tender and comforting. It’s simple, hearty, and ideal for family dinners or when you want something cozy but impressive.
Prep Time: 15 minutes
Cooking Time: 35–40 minutes
Total Time: About 55 minutes
Servings: 4
Ingredients
For the Chicken
4 bone-in or boneless chicken thighs or breasts
1 tsp salt
½ tsp black pepper
1 tsp paprika
½ tsp garlic powder
½ tsp onion powder
½ tsp dried thyme or Italian seasoning
3 tbsp all-purpose flour (for dredging)
3 tbsp oil or butter (for frying)
For the Gravy
2 tbsp butter or oil (use from the pan if possible)
1 large onion, thinly sliced
3 cloves garlic, minced
2 tbsp all-purpose flour
1½ cups chicken broth
½ cup milk or cream (optional, for creamier gravy)
Salt and black pepper to taste
½ tsp dried thyme or parsley
Optional: a pinch of chili flakes or cayenne
Instructions
Season & Coat the Chicken
Pat the chicken dry. In a small bowl, mix salt, pepper, paprika, garlic powder, onion powder, and thyme. Rub the seasoning all over the chicken. Lightly coat each piece with flour, shaking off excess.
Sear the Chicken
Heat oil or butter in a large skillet over medium heat. Add the chicken and cook for about 4–5 minutes per side, until golden brown. The chicken doesn’t need to be fully cooked yet. Remove and set aside.
Cook the Onions
In the same skillet, add a little more butter or oil if needed. Add sliced onions and cook over medium-low heat for 8–10 minutes, stirring occasionally, until soft, golden, and slightly caramelized. Add garlic and cook for 30 seconds.
Make the Gravy
Sprinkle flour over the onions and stir well. Cook for 1 minute to remove the raw flour taste. Slowly pour in the chicken broth while stirring to avoid lumps. Add milk or cream if using. Season with salt, pepper, and thyme.
Smother the Chicken
Return the chicken (and any juices) to the skillet. Spoon gravy over the chicken. Cover and simmer on low heat for 20–25 minutes, or until the chicken is fully cooked and tender.
Finish & Serve
Taste and adjust seasoning. Garnish with fresh parsley if you like. Serve hot.
