Soft Apple Cake
Ingredients:
For the Apples:
- 2 medium-sized apples, sliced
- 25 g butter (1.5 tbsp)
- 15 g lemon juice (1 tbsp)
- 20 g sugar (2 tbsp)
For the Cake Batter:
- 2 eggs (room temperature)
- 130 g sugar (2/3 cup)
- 60 g yogurt (1/4 cup)
- 60 ml milk (room temperature) (1/4 cup)
- 60 ml sunflower oil (1/4 cup)
- 1 tsp vanilla extract
- 200 g flour (1 and 1/2 cups)
- 8 g baking powder (1 and 1/2 tsp)
Directions:
- Prepare the Apples:
- In a pan, melt the butter over medium heat.
- Add the apple slices, lemon juice, and sugar.
- Cook until the apples are softened and slightly caramelized. Set aside to cool.
- Prepare the Cake Batter:
- In a large mixing bowl, whisk the eggs with sugar until light and fluffy.
- Add yogurt, milk, sunflower oil, and vanilla extract, and mix until combined.
- Sift in the flour and baking powder, and gently fold until the batter is smooth and free of lumps.
- Assemble the Cake:
- Pour the batter into a greased 18 cm (7-inch) cake pan.
- Arrange the cooked apple slices evenly on top of the batter.
- Bake the Cake:
- Preheat your oven to 180°C (350°F).
- Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10-15 minutes before transferring to a serving plate.
