Soft Apple Cake

Ingredients:

For the Apples:

    • 2 medium-sized apples, sliced
    • 25 g butter (1.5 tbsp)
  • 15 g lemon juice (1 tbsp)
  • 20 g sugar (2 tbsp)

For the Cake Batter:

    • 2 eggs (room temperature)
    • 130 g sugar (2/3 cup)
    • 60 g yogurt (1/4 cup)
    • 60 ml milk (room temperature) (1/4 cup)
    • 60 ml sunflower oil (1/4 cup)
    • 1 tsp vanilla extract
  • 200 g flour (1 and 1/2 cups)
  • 8 g baking powder (1 and 1/2 tsp)

Directions:

    1. Prepare the Apples:
        • In a pan, melt the butter over medium heat.
        • Add the apple slices, lemon juice, and sugar.
        • Cook until the apples are softened and slightly caramelized. Set aside to cool.

    2. Prepare the Cake Batter:
        • In a large mixing bowl, whisk the eggs with sugar until light and fluffy.
        • Add yogurt, milk, sunflower oil, and vanilla extract, and mix until combined.

      • Sift in the flour and baking powder, and gently fold until the batter is smooth and free of lumps.
    3. Assemble the Cake:
        • Pour the batter into a greased 18 cm (7-inch) cake pan.

      • Arrange the cooked apple slices evenly on top of the batter.
    4. Bake the Cake:
        • Preheat your oven to 180°C (350°F).

      • Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
      • Let the cake cool in the pan for 10-15 minutes before transferring to a serving plate.
