Sourdough Fried Chicken Bites (Air Fryer Recipe)
Introduction
These sourdough fried chicken bites are crispy, juicy, and packed with a rich tangy flavor from sourdough breadcrumbs. Using an air fryer means you get all the crunch without the excess oil of deep-frying. The sourdough coating adds a unique depth of flavor, making these bites irresistible. Perfect for snacking, game nights, or as a protein-packed meal!
Ingredients
For the Chicken Bites:
2 boneless, skinless chicken breasts (or thighs), cut into bite-sized cubes
1 cup buttermilk (or plain yogurt thinned with milk)
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon smoked paprika
¼ teaspoon cayenne pepper (optional for heat)
For the Coating:
1½ cups sourdough breadcrumbs (homemade or store-bought)
½ cup all-purpose flour
½ teaspoon salt
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon paprika
1 large egg
For Air Frying:
Olive oil spray or cooking spray
Instructions
Marinate the Chicken
In a bowl, combine the chicken pieces, buttermilk, salt, black pepper, garlic powder, smoked paprika, and cayenne (if using).
Mix well, cover, and refrigerate for at least 30 minutes (or up to 4 hours for extra tenderness).
Prepare the Coating
In one shallow bowl, whisk the egg.
In another bowl, mix the sourdough breadcrumbs, flour, salt, garlic powder, onion powder, and paprika.
Coat the Chicken
Remove the marinated chicken from the fridge.
Dip each piece into the whisked egg, ensuring it’s fully coated.
Then, coat it in the sourdough breadcrumb mixture, pressing gently so the crumbs stick well.
Air Fry the Chicken
Preheat your air fryer to 375°F (190°C) for 3 minutes.
Lightly spray the air fryer basket with oil to prevent sticking.
Place the coated chicken bites in a single layer, leaving space between them for even cooking.
Spray the tops with a light coat of oil for a crispier texture.
Cooking Time
Air fry at 375°F (190°C) for 10-12 minutes, flipping halfway through.
Check for doneness: The internal temperature should reach 165°F (74°C), and they should be golden brown and crispy.
Serve & Enjoy!
Serve hot with dipping sauces like honey mustard, ranch, or a spicy sriracha mayo.
Garnish with chopped parsley or a squeeze of lemon for extra flavor.
Tips for Best Results
Use fresh sourdough breadcrumbs for the best crunch and flavor.
Don’t overcrowd the air fryer to ensure even crisping.
Let the chicken rest for a couple of minutes after air frying—this keeps it juicy inside!
