Additional gruyere for topping
Heat water to 172°F (77.8°C)
Spray molds with cooking spray
Set up water bath
Combine eggs, cheeses, cream in blender
Blend until completely smoot
Season with salt and pepper
Place mason rings in water bath
Fill each mold 3/4 full
Add bacon, herbs, spinach
Top with extra cheese
Cover molds with foil
Cook for 1 hour
Remove carefully with tongs
Let rest 5 minutes
Remove from molds
Sear tops with torch (optional)
Garnish with fresh herbs
Serve immediately
