Southern Salmon Patties
Components:
- One 14.75-ounce can of drained and flaked pink or red salmon
- Half a cup of breadcrumbs, preferably plain or seasoned
- 1/4 cup of onion, chopped finely
- 1/4 cup of finely chopped bell pepper (optional)
- One beaten egg
- Two tablespoons of mayonnaise
- One tablespoon of yellow mustard, or Dijon,
- Worcestershire sauce (one teaspoon)
- 1/4 teaspoon powdered garlic
- To taste, add salt and black pepper.
- Two tablespoons of frying oil (olive or veggie)
Extras that are optional:
- Use fresh dill or parsley as a garnish or flavoring.
- For a cheesy twist, add 1/4 cup of shredded cheese, either Parmesan or cheddar.
- For extra heat, use cayenne pepper or hot sauce.

1. Drain the Salmon Thoroughly: To avoid the mixture getting too moist, which could make it challenging to form patties, make sure the salmon is thoroughly drained.
2. Chill the Patties: Before cooking, if you have time, place the patties in the refrigerator for about half an hour. This improves their ability to stay together while cooking.
3. Use a Non-stick Pan: The patties should be fried on a well-seasoned cast-iron skillet or non-stick skillet to prevent sticking.

Directions:
1. Prepare the salmon by opening the can, thoroughly draining it, and, if desired, removing any bones or skin. In a large mixing basin, use a fork to flake the salmon.
2. Mix: Toss the flaked salmon with the breadcrumbs, finely sliced onion, bell pepper (if using), beaten egg, Worcestershire sauce, mayonnaise, mustard, garlic powder, salt, and pepper. Gently stir until just blended.
3. Create Patties: Using your hands, shape the mixture into patties that are roughly 3 to 4 inches across. Add a little extra breadcrumbs if the mixture is too moist.
4. Cook: In a skillet, heat the oil over medium heat. When the skillet is heated, carefully put the patties in and cook for 3–4 minutes on each side, or until crispy and golden brown.
5. Serve: Move the fried patties to a platter lined with paper towels so that any extra oil can be drained, then serve them hot. Add some lemon juice or parsley as a garnish, if desired.
