Base:

  • 2 cans of heavy cream (about 12 oz each), without the liquid
  • 3 tablespoons of cornstarch dissolved in a little water

Topping:

  • 6 tablespoons of sugar
  • 4 egg whites, beaten to stiff peaks
  • 2 cans of heavy cream (about 12 oz each), without the liquid
  • Shredded coconut (to taste)

Directions:

  1. Getting the Base Ready:
    Cut the pineapple into little pieces first. Add the milk, butter, cornstarch mixed in a little water, and sweetened condensed milk to a pot.
  2. Then simmer over medium heat, stirring continuously, until the mixture smoothes out and thickens. Add the pineapple and heavy cream when it has cooled.
  3. Topping preparation: Beat the egg whites until stiff peaks form, then gradually add the sugar until the mixture is solid. Using a spoon, carefully fold in the heavy cream.
  4. Assembly: Lastly, spread the pineapple cream in a large glass dish. Then pour over the egg white mixture and top with the shredded coconut. Keep in the fridge for a minimum of three hours.
