Base:
- 1 cup of milk
- 1 tablespoon of margarine
- 2 cans of canned pineapple (20 oz each)
- 2 cans of sweetened condensed milk (14 oz each)
- 2 cans of heavy cream (about 12 oz each), without the liquid
- 3 tablespoons of cornstarch dissolved in a little water
Topping:
- 6 tablespoons of sugar
- 4 egg whites, beaten to stiff peaks
- 2 cans of heavy cream (about 12 oz each), without the liquid
- Shredded coconut (to taste)
Directions:
- Getting the Base Ready:
Cut the pineapple into little pieces first. Add the milk, butter, cornstarch mixed in a little water, and sweetened condensed milk to a pot. - Then simmer over medium heat, stirring continuously, until the mixture smoothes out and thickens. Add the pineapple and heavy cream when it has cooled.
- Topping preparation: Beat the egg whites until stiff peaks form, then gradually add the sugar until the mixture is solid. Using a spoon, carefully fold in the heavy cream.
- Assembly: Lastly, spread the pineapple cream in a large glass dish. Then pour over the egg white mixture and top with the shredded coconut. Keep in the fridge for a minimum of three hours.
