Ingredients

For the Spicy Honey Garlic Chicken:

2 lbs boneless, skinless chicken breast (cut into bite-sized pieces)

2 tbsp olive oil

1 tsp salt

½ tsp black pepper

1 tsp paprika

½ tsp cayenne pepper (adjust to taste)

½ tsp garlic powder

For the Honey Garlic Sauce:

⅓ cup honey

¼ cup soy sauce

2 tbsp sriracha (adjust for spice preference)

1 tbsp apple cider vinegar (or rice vinegar)

4 cloves garlic (minced)

1 tsp cornstarch + 2 tbsp water (for thickening)

For the Seasoned Rice:

2 cups cooked basmati or jasmine rice

1 tbsp butter

½ tsp salt

½ tsp garlic powder

½ tsp onion powder

¼ tsp red pepper flakes

1 tbsp chopped parsley

Instructions

Cook the Chicken

Heat olive oil in a large pan over medium-high heat.

Add the bite-sized chicken pieces, season with salt, pepper, paprika, cayenne, and garlic powder.

Cook for 6-8 minutes until golden brown and fully cooked. Remove from the pan and set aside.

Prepare the Honey Garlic Sauce
In the same pan, add minced garlic and sauté for 30 seconds until fragrant.
Pour in honey, soy sauce, sriracha, and apple cider vinegar. Stir to combine.
in a small bowl, mix cornstarch with water and add it to the sauce. Let it simmer for 1-2 minutes until thickened.
Add the cooked chicken back into the pan, tossing to coat evenly with the sauce.
Prepare the Seasoned Rice
 In a separate pan, melt butter over medium heat.
Add the cooked rice, garlic powder, onion powder, salt, and red pepper flakes.
Stir well to coat the rice with seasonings. Cook for 2-3 minutes.
Garnish with chopped parsley.
Assemble and Serve
Divide the rice and chicken into meal prep containers.
