  • 2 cups fresh pineapple, diced small

  • 2–3 jalapeños, thinly sliced (remove seeds for milder heat)

  • ¼ cup sugar (brown or white)

  • ¼ cup apple cider vinegar or white vinegar

  • 1 tbsp lime juice (freshly squeezed)

  • 2 cloves garlic, minced

  • 1 tsp grated fresh ginger

  • ½ tsp salt

  • 2 tbsp green onions, finely chopped

  • 1 tbsp oil (neutral or olive)

 Instructions

Step 1: Sauté the aromatics
Heat the oil in a medium saucepan over medium heat. Add the minced garlic and grated ginger. Sauté for about 30–45 seconds until fragrant, stirring constantly so they don’t brown or burn. This step builds the base flavor of the chutney.

Step 2: Add the heat
Stir in the sliced jalapeños and chili flakes or chili paste. Cook for 2–3 minutes to soften the peppers slightly and release their spice. If you prefer a milder chutney, start with less chili and adjust later.

Step 3: Cook the pineapple
Add the diced pineapple to the pan and stir well to coat it with the spices. Let it cook for about 4–5 minutes, allowing the fruit to soften and release its juices. The natural sweetness of the pineapple will balance the heat beautifully.

Step 4: Sweet and tangy balance
Add sugar, vinegar, lime juice, and salt. Stir thoroughly. Reduce the heat to low and let the mixture simmer uncovered for 12–15 minutes. Stir occasionally until it thickens into a glossy, chunky sauce. The chutney should resemble a loose jam consistency.
