Ingredients:
For the Spicy Shrimp:
  1. 1 lb shrimp, peeled and deveined

  6. 1/2 tsp cumin
  7. 1 clove garlic, minced
  8. Salt & pepper to taste
For the Cilantro-Lime Rice:
  1. 1 cup jasmine or basmati rice
  2. 1 1/2 cups water or chicken broth
  3. 1 tbsp lime juice
  4. 1/4 cup fresh cilantro, chopped
  5. Salt to taste

For the Corn Salsa:

  1. 1 cup corn kernels (fresh, frozen, or canned)
  2. 1/2 cup cherry tomatoes, diced
  3. 1/4 cup red onion, finely diced
  4. 1 tbsp lime juice
  5. 1/4 cup fresh cilantro, chopped
  6. Salt & pepper to taste
Additional Toppings:
  1. 1 cup black beans, rinsed and drained
  2. 1 avocado, sliced
  3. 1/4 cup Feta cheese (optional)
  4. For the Chipotle Mayo:
  5. 1/4 cup mayonnaise
  6. 1 tbsp chipotle sauce (or 1 chipotle pepper in adobo, minced)
  7. 1 tsp lime juice
Instructions:
Marinate the Shrimp:
In a bowl, combine olive oil, lime juice, chili powder, smoked paprika, cumin, garlic, salt, and pepper. Toss the shrimp in the marinade and set aside for 15-20 minutes.
Cook the Cilantro-Lime Rice:
In a pot, combine rice with water or broth. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes until rice is tender. Fluff with a fork, then stir in lime juice, cilantro, and a pinch of salt.
