These Spinach and Cheese Puff Pastry Squares are the ultimate savory snack or brunch treat. Golden, flaky puff pastry envelopes a creamy filling made with spinach, cheese, and seasoning. Using the air fryer, you get a beautifully crisp exterior without turning on the oven. These are great for appetizers, tea-time, or even a quick meal paired with soup or salad.
Ingredients (Makes 9 squares)
1 sheet frozen puff pastry (thawed)
1 cup cooked spinach (squeezed dry) — or use 1/2 of a 10 oz frozen spinach block, thawed and drained
½ cup ricotta cheese (or cream cheese)
½ cup shredded mozzarella or cheddar cheese
2 tbsp grated Parmesan cheese
1 egg (divided: half for filling, half for egg wash)
1 garlic clove, minced (optional)
Salt & pepper to taste
½ tsp dried oregano or thyme (optional)
Flour for dusting surface
Instructions
Prepare the Filling (5 minutes)
In a bowl, combine cooked & drained spinach, ricotta (or cream cheese), shredded cheese, Parmesan, minced garlic (if using), half the egg (lightly beaten), salt, pepper, and herbs.
Mix until well blended and creamy. Set aside.
Prepare the Puff Pastry (5 minutes)
On a lightly floured surface, roll out the thawed puff pastry sheet into a 10×10 inch square.
Cut into 9 equal squares (3×3 grid).
Place a heaping teaspoon of filling in the center of each square.
Fold or Cover (Optional)
You can either:
Leave them open-faced like mini tarts, or
Add another square on top and seal the edges with a fork (like hand pies).
Brush the tops with egg wash (remaining egg beaten with 1 tsp water).
Air Fry (8–10 minutes)
Preheat air fryer to 360°F (182°C) for 3 minutes.
Lightly spray the air fryer basket with oil or line with parchment (with holes).
Place 4–5 squares at a time in the basket (don’t overcrowd).
Air fry at 360°F for 8–10 minutes, until puffed and golden brown.
Remove and cool slightly before serving. Repeat with remaining squares.
Serving Ideas
Serve warm with a side of marinara, tzatziki, or garlic yogurt sauce.
Add a drizzle of honey or chili oil for a flavor twist.
