2 tbsp olive oil

3 cloves garlic, minced

4 cups fresh spinach, chopped (or 1 ½ cups frozen, thawed & squeezed dry)

½ tsp salt

½ tsp black pepper

¼ tsp red pepper flakes (optional, for heat)

½ cup shredded mozzarella or feta cheese

¼ cup grated Parmesan cheese

Instructions

1. Prepare the Dough

In a mixing bowl, combine warm milk, sugar, and yeast. Let sit for 5-10 minutes until foamy.

Add flour, salt, butter, and egg. Mix until a dough forms.
Knead for 8-10 minutes until smooth and elastic. Cover and let rise for 1 hour or until doubled in size.

2. Make the Spinach Filling

Heat olive oil in a pan over medium heat.
Sauté garlic until fragrant, about 30 seconds.

Add spinach, salt, pepper, and red pepper flakes. Cook for 2-3 minutes until wilted.

Remove from heat and mix in mozzarella (or feta) and Parmesan. Let cool.
3. Shape & Fill the Bread

For a stuffed loaf: Roll out dough into a rectangle, spread the spinach filling, then roll into a log. Place in a greased loaf pan.
