Spinach Bread Recipe

For the Dough:
3 ½ cups (440g) all-purpose flour (or bread flour)
2 ¼ tsp instant yeast (1 packet)
1 cup warm milk (110°F)
2 tbsp sugar
1 tsp salt
3 tbsp unsalted butter, softened
1 egg
For the Spinach Filling:
2 tbsp olive oil
3 cloves garlic, minced
4 cups fresh spinach, chopped (or 1 ½ cups frozen, thawed & squeezed dry)
½ tsp salt
½ tsp black pepper
¼ tsp red pepper flakes (optional, for heat)
½ cup shredded mozzarella or feta cheese
¼ cup grated Parmesan cheese
Instructions
1. Prepare the Dough
In a mixing bowl, combine warm milk, sugar, and yeast. Let sit for 5-10 minutes until foamy.
Add flour, salt, butter, and egg. Mix until a dough forms.
Knead for 8-10 minutes until smooth and elastic. Cover and let rise for 1 hour or until doubled in size.
2. Make the Spinach Filling
Heat olive oil in a pan over medium heat.
Sauté garlic until fragrant, about 30 seconds.
Add spinach, salt, pepper, and red pepper flakes. Cook for 2-3 minutes until wilted.
Remove from heat and mix in mozzarella (or feta) and Parmesan. Let cool.
3. Shape & Fill the Bread
For a stuffed loaf: Roll out dough into a rectangle, spread the spinach filling, then roll into a log. Place in a greased loaf pan.
For rolls: Divide the dough into pieces, flatten, fill, and roll into spirals. Place in a greased baking dish.
Cover and let rise for 30 minutes.
4. Bake to Perfection
Preheat oven to 375°F (190°C).
Bake for 25-30 minutes until golden brown.
Brush with melted butter and sprinkle extra Parmesan on top.
