Introduction

Spinach & Feta Cookies, also known as Spanakopita Cookies, are a delicious and unique twist on the classic Greek spanakopita. These savory cookies have a flaky, crispy exterior with a flavorful filling made of spinach, feta cheese, and aromatic herbs. They’re lighter and quicker to make than traditional spanakopita because they’re air-fried instead of baked! Ingredients (Makes about 10–12 cookies)

For the Dough:

1 ½ cups (180g) all-purpose flour

½ tsp baking powder

½ tsp salt

½ cup (113g) unsalted butter, softened

1 egg yolk

¼ cup Greek yogurt or sour cream

For the Filling:

1 cup fresh spinach, finely chopped (or ½ cup frozen, thawed & squeezed dry)

½ cup feta cheese, crumbled

1 small garlic clove, minced

¼ tsp black pepper

¼ tsp dried oregano or dill

1 tbsp olive oil

For Topping:

1 egg, beaten (for egg wash)

Sesame seeds or nigella seeds (optional, for garnish)

Instructions

Make the Dough

In a bowl, whisk together flour, baking powder, and salt.

In another bowl, cream the butter until smooth, then mix in the egg yolk and Greek yogurt.

Gradually add the flour mixture and mix until a soft dough forms. If it’s too dry, add a teaspoon of water.

Wrap the dough in plastic wrap and refrigerate for 15–20 minutes.

 Prepare the Filling

Heat 1 tbsp olive oil in a pan over medium heat.

Add garlic and spinach, and sauté for 2–3 minutes until wilted.

Remove from heat and mix in the feta cheese, black pepper, and oregano. Let it cool.

 Assemble the Cookies

Roll out the chilled dough on a lightly floured surface to about ¼-inch thickness.

Cut out small circles (about 2.5 inches in diameter) using a cookie cutter or a glass.

Place 1 teaspoon of filling onto each round.

Fold in half like a turnover or press another circle on top and seal the edges with a fork.

Brush the tops with beaten egg and sprinkle with sesame or nigella seeds.

 Air Fry the Cookies

Preheat the air fryer to 350°F (175°C) for 2 minutes.

Place the cookies in the air fryer basket in a single layer (don’t overcrowd).

Air fry for 8–10 minutes, or until golden brown and crispy.

Let cool for 5 minutes before serving.

Serving & Storage Tips

Serve warm with tzatziki sauce or Greek yogurt for dipping.

Refrigerate leftovers in an airtight container for up to 3 days.

Freeze unbaked cookies for up to 3 months—just air fry them straight from frozen, adding 2 extra minutes.
