1 (14-ounce) package frozen chopped spinach, thawed and squeezed dry
½ cup crumbled feta cheese
¼ cup grated Parmesan cheese
2 eggs
¼ cup chopped red onion
¼ cup chopped fresh dill (or 1 tbsp dried)
¼ cup olive oil
¼ teaspoon salt
⅛ teaspoon black pepper
1 (10-ounce) package low-carb tortillas (about 6–8 medium tortillas)
🔪 Instructions
Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
In a large bowl, mix spinach, feta, Parmesan, eggs, onion, dill, olive oil, salt, and pepper until well combined.
Scoop about ¼ cup of the spinach mixture onto each tortilla. Spread it evenly, leaving a bit of space at the edges.
Roll tortillas tightly and place seam-side down in the prepared baking dish.
Bake uncovered for 20–25 minutes, until golden brown and slightly crispy on top.
Cool slightly before serving. These are great warm or at room temperature!
