Ingredients:

2 large eggs

1/2 cup fresh spinach (washed and chopped)

1/4 cup mushrooms (sliced)

1/4 cup cherry tomatoes (diced)

Instructions:

Prepare the Vegetables:
Heat the olive oil  in a non-stick skillet over medium heat. Add the mushrooms and sauté for about 2 minutes until soft. Add the spinach and cook for another minute  until it wilts. Finally  add the tomatoes and cook for another 30 seconds  just until softened.

Whisk the Eggs:
While the vegetables are cooking crack the eggs into a bowl and whisk them together with a pinch of salt and pepper until fully combined.

Cook the Omelette:
Push the vegetables to one side of the skillet. Pour the beaten eggs into the empty side of the pan swirling the pan to evenly spread the eggs. Let them cook for about 1-2 minutes, until the edges start to set but the center is still slightly runny.

Assemble the Omelette:
Once the eggs are mostly set  spoon the sautéed vegetables onto one half of the omelette. If you’re using cheese sprinkle it on top of the vegetables.
