Last night dinner I made A delicious and classic Ricotta and Spinach Quiche . Hopefully you will enjoy this delicious Ricotta Quiche as much as I do and it will become a family favourite. So let’s begin:
Ingredients:
– 1 x 9-inch pie crust ( shop bought)
– 2 cups fresh spinach, chopped
– 1 cup ricotta cheese
– 1/2 cup grated cheddar cheese
– 1/2 cup grated Parmesan cheese
– 1/2 cup diced onion
– 2 cloves garlic, minced
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 2 large eggs
– 1 cup heavy cream
Instructions:
1. Preheat oven to 375°F (190°C).
2. Roll out pie crust and place in a 9-inch tart pan.
3. In a skillet, sauté onion and garlic until softened. Add spinach and cook until wilted.
4. In a bowl, combine ricotta, cheddar, Parmesan, salt, and pepper.
5. Add cooked spinach mixture and eggs to the ricotta mixture. Mix well.
6. Pour mixture into pie crust.
7. Bake for 35-40 minutes or until edges are golden brown.
8. Remove from oven and let cool.
Tips and Variations:
– Use frozen spinach, thawed and drained, if fresh is not available.
– Add diced ham or bacon for added protein.
– Substitute feta or goat cheese for a different flavor.
– Serve with a side salad or roasted vegetables. Enjoy and let me know if you give it a try
