 Ingredients:

6 large eggs

½ cup milk (whole or 2%)

½ cup shredded cheese (cheddar, feta, or Swiss)

1 cup fresh spinach, chopped

½ cup diced bell pepper (optional)

¼ cup diced onion

¼ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon garlic powder (optional)

½ teaspoon olive oil (for greasing muffin tin)

 Instructions:

Preheat your oven to 375°F (190°C) or set your air fryer to 325°F (163°C).

Grease a 6-cup muffin tin with olive oil or use silicone muffin liners.

Whisk eggs and milk in a bowl until well combined.

Add cheese, spinach, bell pepper, onion, salt, pepper, and garlic powder. Mix well.

Pour the mixture evenly into the muffin cups, filling each about ¾ full.
