1 tbsp cornstarch
2 tbsp vegetable oil (divided)
1 cup broccoli florets
1 bell pepper, sliced (red, yellow, or green)
1 small carrot, julienned
½ cup snap peas
2 green onions, chopped
2 cloves garlic, minced
1 tsp ginger, grated
For the Sauce:
2 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp rice vinegar
1 tsp sesame oil
1 tsp honey (or brown sugar)
¼ cup chicken or vegetable broth
1 tsp cornstarch (mixed with 1 tbsp water for thickening)
Instructions:
Prepare the Scallops
Pat the scallops dry with a paper towel and toss with 1 tbsp cornstarch to help them sear better.
Heat 1 tbsp vegetable oil in a wok or skillet over medium-high heat.
Sear scallops for 1-2 minutes per side, until golden brown. Remove from the pan and set aside.
Stir-Fry the Vegetables
Add 1 tbsp oil to the pan. Stir-fry broccoli, bell pepper, carrot, and snap peas for 3-4 minutes until tender-crisp.
Add garlic, ginger, and green onions, cooking for 30 seconds until fragrant.
Add the Sauce & Scallops
In a small bowl, whisk together soy sauce, oyster sauce, rice vinegar, sesame oil, honey, and broth.
Pour the sauce into the pan and stir well.
Add the cooked scallops back in, along with the cornstarch slurry, and toss to coat everything evenly.
Cook for 1-2 minutes until the sauce thickens.
Serve & Enjoy
Serve hot over steamed rice or noodles, garnished with sesame seeds or extra green onions.
Tips & Tricks:
Don’t Overcook Scallops – They cook quickly and become rubbery if overdone. Aim for a golden sear and remove from heat promptly.
Use Fresh Ingredients – Crisp vegetables add texture and contrast to the soft scallops.
Adjust Spice Level – Add red pepper flakes or sriracha for a spicy kick.
Make It Gluten-Free – Use tamari or coconut aminos instead of soy sauce.
