Recipe for a stir-fried shrimp and asparagus dish with mushrooms
Components:
- One pound (450 grams) of large, peeled and deveined shrimp
- One bunch of asparagus, cut into 2-inch segments after trimming
- One cup of sliced mushrooms (shiitake, button, or cremini mushrooms work nicely)
- Two tablespoons of vegetable or olive oil
- Three minced garlic cloves
- One inch of chopped or grated ginger
- Two tablespoons of soy sauce (or gluten-free tamari)
- One tablespoon of oyster sauce, optional for extra umami
- One teaspoon of sesame oil
- One tablespoon of brown sugar or honey (optional for a little sweetness)
- Half a teaspoon of optional red pepper flakes (for heat)
- To taste, add salt and pepper.
- If moisture is required, add two tablespoons of water or chicken broth.
- Two tablespoons of optional sesame seeds for garnish
- Green onions (for garnish, if desired)
Directions:
Get the ingredients ready:
- If you haven’t done so earlier, peel and devein the shrimp. Use a paper towel to pat them dry.
- Cut the asparagus into 2-inch segments after trimming it.
- Slice and clean the mushrooms.
- Chop the ginger and garlic.
Prepare the shrimp:
- In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat.
- Arrange the shrimp in a single layer and fry them for two to three minutes on each side, or until they are cooked through and pink. After taking the shrimp out of the skillet, place them aside.
Bring the veggies to a boil.
- Add the remaining 1 tablespoon of oil to the same skillet.
- Stir-fry the ginger and garlic for about 30 seconds, or until fragrant.
- Add the asparagus and cook, tossing periodically, until they begin to get soft but still crisp, 2 to 3 minutes.
- Stirring regularly, add the mushrooms to the skillet and cook for an additional three to four minutes, or until they have softened and released their moisture.
Mix and season:
- Return the shrimp to the skillet when the vegetables have finished cooking.
- Add the sesame oil, honey (if using), oyster sauce (if using), and soy sauce. Mix everything together.
- Season with salt, pepper, and red pepper flakes.
- To make a little sauce, add a tablespoon or two of water or chicken broth if the stir-fry appears dry.
Complete and add a garnish:
- To allow the flavors to combine and the shrimp to heat through, stir everything together for a further one to two minutes.
- If preferred, garnish with green onions and sesame seeds.
- Serve: Serve the hot shrimp and asparagus stir-fry with noodles, quinoa, or steaming rice.
