Strawberry Shortcake Ice Cream Bars 🍓

  • 3 cups frozen strawberries
  • 2 cups full fat coconut milk
  • 2/3 cup maple syrup (or another sweetener)
  • 2 tsp vanilla extract
Coating:
  1. 1 cup vanilla sandwich cookies
  2. 1/2 cup freeze dried strawberries
Preparations

 

  • Add the frozen strawberries, coconut milk, maple syrup and vanilla extract to a blender and blend until smooth.
  • Pour into popsicle molds and freeze until set (~4-6 hours). Meanwhile, pulse together cookies and freeze dried strawberries until they form a fine crumb mixture.
  • Run the popsicle molds under warm water to release, then coat both sides of the popsicle in the cookie mixture. Return to freezer until ready to enjoy.
