Strawberry Shortcake Ice Cream Bars 🍓
- 3 cups frozen strawberries
- 2 cups full fat coconut milk
- 2/3 cup maple syrup (or another sweetener)
- 2 tsp vanilla extract
Coating:
- 1 cup vanilla sandwich cookies
- 1/2 cup freeze dried strawberries
Preparations
- Add the frozen strawberries, coconut milk, maple syrup and vanilla extract to a blender and blend until smooth.
- Pour into popsicle molds and freeze until set (~4-6 hours). Meanwhile, pulse together cookies and freeze dried strawberries until they form a fine crumb mixture.
- Run the popsicle molds under warm water to release, then coat both sides of the popsicle in the cookie mixture. Return to freezer until ready to enjoy.
